Can store managers sign off?

Yes. The store manager signs on the engineer's phone, with their name, before the engineer leaves.

What if a store is not ready?

Put the job on hold with a reason, or record a revisit. A revisit is a new visit on the same job, and you decide whether the client pays for it.

Can the client see the whole rollout?

Yes. Share one read-only guest link for the whole project. Your client sees each store's status and schedule, and the proof once work is closed. Never your prices.
